Warm Peach Crumble
“Sweet, Satisfyingly Soulful, and Surprisingly Healthy: Where Winter Meets Warmth
During the winter months, desserts that are likely more synonymous with winter are warm and spicy pumpkin pies, with the scents of nutmeg, cinnamon, allspice, and cloves filling the air. Mmmmm, just thinking about that makes me want a slice of pumpkin pie with a warm buttery-like crust ( dairy free of course, but not without a buttery-like flavor), sweet potato pie, for those of you sweet potato lovers out there, or even the all year round classic apple pie, good for any occasion. However, peaches can be warm and soulful as well. Peaches are sweet, juicy, and full of flavor. Peaches are typically in season in spring and summer through fall, so it’s a long season for peaches, but they’re not in season in the December months, which means you have two options you can reach for. Frozen peaches, which are great to have on hand year-round, or they’re perfect for canning.
If you take the canning route, it’s like time travel because past you is thinking of how future you would love these peaches, and future you is thanking past you for being an overachiever with delicious priorities. However, no shade to those of you who are like me, who more often than not, just head to the store to buy bags of frozen peaches to keep in the freezer. I need to conserve my energy, after all, creating a healthy meal during the holidays requires focused time management.
Peaches are rich in vitamins A, C & E. Get the yellow varieties as they are particularly rich in vitamin A. They provide both soluble and insoluble fiber, which support digestion. They’re also low in carbs. You don’t need a lot of sweetness to make them a satisfying dessert, and for this reason, starting with peaches is a great way to make a healthy dessert that everyone will enjoy.
With a little sweetener ( I like Truvia or Whole Earth ), you’ll have a warm, hearthy ( yes, I said hearthy, which means symbolizing the joys of warmth and belonging around a central place of comfort) dessert to share around the table in no time, plus no one will feel guilty for eating a second helping. Adding this dessert to a healthy meal during the holidays feels like comforting nourishment that is a celebration on the plate.
This warm peach crumble isn’t complete without the crumble. To make it, and to keep it healthy yet satisfying, this crumble will be made with quinoa and oat flour. Oats are high in fiber, and quinoa is a healthy carb with a good amount of fiber, so this crumble won’t spike your blood sugar.
To make this dessert, you’ll start with the crumble.
Preheat oven to 350*
You’ll need some gluten-free rolled oats, which you can find in many grocery stores. If, for some reason, you’re unsuccessful, I’ve listed below some of the oat brands I have used. There are varying degrees of gluten-free rolled oats, which indicate how many parts per million of gluten the oats contain. While rolled oats on their own are naturally gluten-free, the issue is with how much exposure to wheat, barley, and other gluten grains they have had while growing and being processed. Standard gluten-free rolled oats have less than 20 parts per million of gluten. Purity Protocol Oats have less than 5 parts per million of gluten. Be sure to find the oats that you need for your circumstances.
Once you have the oats, if you have a grain mill, coffee grinder, or high-powered blender, you can make your own gluten-free oat flour and quinoa flour. If you don’t have a machine that grinds small enough for quinoa flour, you can get Azure Standard’s quinoa flour here.
In a large bowl, you’ll combine the quinoa flour, oat flour, salt, and sweetener. To make this dairy-free, I use canola oil as my oil of choice, but feel free to use any oil you prefer. Add the oil to the bowl, then cut in with a fork until you make coarse crumbs. Add in the water. It should resemble coarse crumbs. Cover a sheet pan with parchment and then pour the crumble on top. Bake for about 10 minutes until golden brown.
In a large saucepan, add the peaches. Add the sweetener, spices, and water. Cook on medium-high heat for about 5 minutes, stirring occasionally. In a small bowl, dissolve the arrowroot starch with the water. Turn down the stove to medium heat. Add in the arrowroot starch and stir quickly. The liquid will thicken. Add the peaches to a square baking dish. Add on top the baked crumble.
Optional: Drizzle some sugar-free caramel sauce on top. Serve with dairy-free ice cream.
You can make your own dairy-free vanilla ice cream or buy it from the store. My favorite brand is linked here.
There’s something really satisfying about enjoying food that you have made with your own hands, with healthy ingredients that you know what’s in it. It’s delightful and comforting. So whenever you’re craving a sweet, satisfying dessert that’s not going to ruin your healthy eating progress, it doesn’t have to feel painful; you just need the right ingredients and a little adventure.
