Berry Sweet Potato Fruit Bowl
This is a quick and easy dessert bowl that would ruin your diet. A quick bite to satsify those sweet tooth cravings. Use sugar free replacement or raw honey if you're feeling fancy.
To make this recipe quick and easy, you’ll need a bag of frozen sweet potatoes. They should be where the frozen vegetables are. If you don’t have frozen sweet potatoes where you are or if you don’t prefer them, you can use fresh ones, but the preparation time will be significantly longer. For fresh sweet potatoes, peel and wash them and then poke them with a fork or knife. Cover the sweet potatoes with some foil and place in a preheated 350 oven for 20-25 minutes. If you have larger potatoes, they may take a bit longer. When they are done, they should be soft and able to be cut with a fork.
To cook frozen sweet potatoes, use a small skillet and add about ¼ cup water. Cook the sweet potato on medium-high heat, covered, for about 7 minutes, or until heated through. While the sweet potatoes are cooking, you can get out the berries and chia seeds. In a small microwaveable bowl, add the berries. Cook for 2-3 minutes, stirring after 2 minutes; if they’re not done, heat an additional one minute. Take out a bowl and add the sweet potatoes. Place the berries on top. Top with the pumpkin seeds and chia seeds.

Ingredients
5 oz of sweet potato
8 oz of mixed berries
1.5 tbsp pumpkin seeds
1/2 tbsp chia seeds
1 oz of crumb topping optional
Directions
In a skillet, combine 5 oz. of frozen sweet potatoes. Add 1/4 cup of water. Cook with the cover on for approximately 7 minutes or so until tender. Cool and transfer to a bowl.
For fresh sweet potatoes, peel and rinse. Pierce with a fork or a knife. Cover with foil. Preheat oven to 350*. Cook for 20-25 minutes or until tender. Allow to cool for about 10–15 minutes. Cut into pieces and place in a bowl.
In a small bowl, heat frozen mixed berries in the microwave for 2-3 minutes. Add to the bowl. Top with pumpkin and chia seeds. Top with crumb topping
